WOW. I can’t believe Super Bowl 2024 is in 3  Days.  It is  the first major food holiday of 2024 and the second biggest food holiday in the U.S. after Thanksgiving. For many people it’s the final nail in the coffin of their  New Year’s Resolution” to get fit, lose weight and regain their health but it doesn’t have to be. Ultimate Fat Blasting Chili 

The perfect recipe to serve in small appetizer cups or for a meal

This is by far a member favorite recipe from our transformation challenges and weight loss programs. INGREDIENTS:

• 1 tbsp. Extra Virgin Olive Oil
• 3 Garlic (cloves, minced)
• 2 Yellow Onion (medium, diced)
• 2 Red Bell Pepper (chopped)
• 2 Carrot (large, diced)
• 2 stalks Celery (diced)
• 2 cups Red Beans
• 2 lbs. 93% Lean Ground Turkey
• 1 1/2 cups Water
• 15 oz. tomato Sauce
• 1 Can 14 1/2 oz. Diced Tomatoes
• 3 tbsp. Chili Powder
• 1 tbsp. Cumin
• 1 tbsp. Paprika
• 1 tsp. Cayenne Pepper (extra if you like it hot!)
• 1 tsp. Sea Salt
• 1/2 tsp. Black Pepper
• 1 tsp. Red Pepper Flakes
• 2 Avocados

DIRECTIONS:

• Heat the oil in a large soup pot over medium heat.
• Add garlic, onions, bell peppers, carrots, celery, and sweet potato.
• Sauté́ for 7-9 minutes, until soft.
• Add the turkey and cook until it starts to brown (about 7 minutes), mixing often to break up chunks.
• Add 1 1/2 cups water, tomato sauce, diced tomatoes in their juices, chili powder, cumin, paprika, cayenne, salt, black pepper, and red pepper flakes.
• Bring to a boil, then reduce to a simmer. Keep uncovered. Cook for about 45 minutes, stirring often.
• When it’s done, add extra spices to reach your desired flavor.
• Slice avocado for garnish.


Crispy Baked Buffalo Chicken Wings

INGREDIENTS:

•2 tbsp arrowroot starch
•1/2 tsp garlic powder
•1/2 tsp onion powder
•1/4 tsp sea salt
•1/4 tsp red cayenne pepper
•1/3 cup ghee melted
•1/3 cup hot sauce (no sugar added)

DIRECTIONS:

•Preheat your oven to 425 degrees.
•Line a large baking sheet with aluminum foil, then pace a wire rack over the baking sheet.
•Pat wings dry with paper towel to absorb excess water, then place in a large bowl.
•Sprinkle all over with the arrowroot, garlic and onion powder, salt and red pepper – toss to evenly coat.
•Arrange wings on wire rack (I had about 12 in my 2 lb package) and place in the middle rack of the preheated oven.
•Bake at 425 degrees for 35 mins, then dip in the sauce (see instructions below) and raise the heat to 450 degrees.
•Continue to bake for 10 mins at 450, remove from oven and drizzle remaining sauce over the top.
•Bake 5 more minutes at 450 degrees, then remove and serve hot, with celery, thinly sliced scallions and ranch dressing (see recipe below)!

FOR THE WING SAUCE

Once the wings have been baking for 30 mins, whisk together the melted ghee and hot sauce.
Remove wings from the oven after baking 35 mins, and, using tongs, dip each one in sauce and place back on wire rack to bake again, this time at 450 degrees (see above)

Mango Lime Guacamole

INGREDIENTS:

•2 large ripe avocados, peeled and pitted
•3 tablespoons minced cilantro
•1 tablespoon minced onion, red or yellow onion•1 tablespoon minced jalapeno (add more or less depending on the level of ZING you prefer)
•1 small clove garlic, minced
•2 teaspoons freshly squeezed lime juice
•Sea salt, 1 teaspoon or to taste
•1 cup diced mango chunks


DIRECTIONS:

•Place the peeled and pitted avocados into a medium sized bowl and sprinkle all the toppings except the sea salt and mangos over the top.
•Mash the minced ingredients into the avocados with a fork to help release their flavor.
•Continue to mash until your desired consistency is reached
•Stir in sea salt to taste
•Add the mangoes.
•Serve immediately or keep refrigerated in an airtight container for up to one day.

Red Lentil Hummus

INGREDIENTS :

• 1 cup red lentils, rinsed
• 1/2 teaspoon sea salt, plus more for finishing
• 1/3 cup tahini
• 1 garlic clove, smashed
• 3 tablespoons olive oil
• Juice of 1/2 lemon
• 1 teaspoon red-wine vinegar
• 1/4 teaspoon coriander
• Pinch sweet paprika
• 1 1/2 tablespoons minced parsley


DIRECTIONS:

• Place lentils in a 2-quart pot; cover with 2 cups water.
• Boil, then reduce heat and simmer until tender (about 20 minutes).
• Combine lentils, salt, tahini, garlic, olive oil, lemon juice, vinegar, and coriander in a food processor and blend until smooth.
• Spoon hummus into a shallow bowl.
• Sprinkle with paprika and parsley.
• Serve with your favorite vegetable or Chips (see recipe below)

Spicy Sweet Potato Chips


INGREDIENTS:

• 4 sweet potatoes, peeled and rinsed
• Olive oil
• Sea salt to taste
• 1 ½ tablespoons coconut sugar• 3/4 teaspoon ground cinnamon
• 1 teaspoon cayenne pepper
• ½ teaspoon sweet paprika


DIRECTIONS:

• Preheat oven to 400°
• Slice the potatoes very thin.
• Brush baking pan with a thin coating of olive oil. (If they are on the larger side, you will need 2 pans)
• Place sliced sweet potato on the pan(s) in a single layer.
• Brush each slice lightly with Olive Oil. ( I use a spray bottle for even misting)
• Mix together salt, sugar, cinnamon, cayenne pepper & paprika and sprinkle onto potatoes (I use a Parmesan shaker to combine and shake for even disbursement because .. OCD)
• Place both trays in oven with equal spacing.
• Bake until potatoes are tender and begin to crisp on the sides. (approximately 15 – 20 minutes)
• Remove from oven and let cool.
• Serve immediately.

BONUS RECIPE : 

I Can’t Believe It’s Not Ranch Dipping Sauce 


INGREDIENTS :

• ¼ cup coconut milk
• 1 teaspoon apple cider vinegar
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
• 1 tablespoon fresh dill or 1 tsp dried dill
• Sea Salt and pepper to taste.


DIRECTIONS:

Blend all together to your desired consistency.
