One of the biggest requests has been Holiday Recipes and snack ideas . Let’s face it this time of year, Frankensweets are everywhere. First it was processed candy for Halloween and  next comes deserts.

Most desserts are packed with refined sugars and inflammatory oils, artificial flavors, gluten, and worse – all of which contribute to a whole host of health problems , weight gain and insane sugar cravings.

You COULD follow the advice in checkout-aisle magazines and all the fitness “experts” that scream, “Give up everything delicious this time of year so you don’t get fat!” or you COULD let me teach you how to “eat smarter not less” ; starting with this recipe.

You know what happens when you rely on willpower, don’t you? At some point, you find yourself  scarfing up every dessert and junk food in sight.

Eating delicious food is human and deprivation doesn’t work.

So, instead of fighting it, go for  it. Enjoy a big slice of pie on Thanksgiving with this fat blasting  Pumpkin Pie recipe that will have everyone coming back for seconds…

Fat Blasting Pumpkin Pie 

Serves: 8

Prep time: 25 mins

Cook time: 60 – 65 mins

Total time: 1 hour 25 – 1 hour 30 mins

INGREDIENTS:

Crust:

  • 1 cup almond flour
  • ½ cup coconut flour
  • ¼ cup flaxseed meal
  • 1 teaspoon sea salt
  • 6 tablespoons unrefined coconut oil, melted
  • 1 cup full-fat unsweetened canned coconut milk
  • 2 tablespoon pure maple syrup
  • 2 tablespoon coconut palm sugar

Filling:

  •  (15-ounce) can 100% pumpkin
  • puree (or 1 ¾ cups fresh
  • pumpkin puree)
  •  6 dates, pits removed
  •  ⅛ teaspoon stevia leaf extract
  • 2 cans full-fat unsweetened
  • canned coconut milk – just
  • the thick cream on top
  • 4 tablespoons coconut oil (or grass-fed butter)
  •  2 teaspoons ground cinnamon
  •  1/2 teaspoon ground ginger
  •  ¼ teaspoon ground nutmeg
  •  ¼ teaspoon ground cloves
  •  ¼ teaspoon sea salt
  •  1 egg
  • 2 egg yolks

DIRECTIONS:

Crust:

  1. Pre heat the oven to 425℉.
  2. Grease a pie pan with butter or coconut oil
  3. In a large bowl, whisk together the coconut flour, almond flour, flaxseed meal, and salt.
  4. Add the melted coconut oil, coconut milk, and maple syrup.
  5. Mix until well combined.
  6. Press the dough into the greased pie pan, and freeze the pie shell while you make the filling.

Filling:

  1. In a blender, blend the pumpkin puree, dates, stevia, coconut  milk, coconut oil, cinnamon, ginger, cloves, nutmeg, and salt until the dates are broken up and well-incorporated.
  2. Add the egg and egg yolks and blend until combined. Taste (if you’re OK with a bit of raw egg), and add a bit more coconut palm sugar, ginger, nutmeg, or salt, to taste.
  3. Pour the filling into the pie shell, and line the rim of the pie pan with foil to cover the crust edges (so they don’t burn)
  4. Bake for 15 minutes.
  5. Reduce the oven temperature to 350℉.
  6. Bake until a knife inserted near the center comes out clean, about 50 minutes.
  7. Remove from the oven and cool 2 hours.
  8. Serve immediately, or cover and refrigerate until ready to serve.
