Anyone who knows me knows 2 things for sure:
1. I love French Fries
2. I’m not a huge vegetable fan unless it’s a smoothie or salad both of which I am generally too lazy to make.
In the spirit of eating vegetables when you don’t like vegetables, here is a recipe that is perfect.
4 medium zucchini, sliced into sticks
2 large egg white
1 cup seasoned bread crumbs (gluten free)
2 Tbs Olive Oil in spray bottle
1 Tbs garlic salt
1 Tbs Cumin
1 Tbs Pepper (optional)
In a small bowl, beat the egg and add garlic salt and pepper to taste.
In a ziplock bag, place the breadcrumb, garlic salt and cumin.
Spray a cookie sheet with Olive Oil and set aside.
Dip the zucchini sticks into the egg and then place into the bread crumb mixture, a few at a time and shake to coat.
Place the breaded zucchini in a single layer and spray more Olive Oil on top.
Bake at 400 degrees for 20 – 25 minutes, or until golden brown.
I eat them plain but you can serve with your favorite dipping sauce (you will need to add these exchanges separately)
